Our Journey

Back in 1994, Joel and Neil met while working as office professionals in the corporate headquarters of a large Orlando, FL based not for profit firm.  

A strong bond and a great friendship was culminated.  
26 years later, Joel and Neil collaborated to fulfill their dream of creating the finest gourmet food truck in Florida.  

Now that dream has become a reality. Our journey has just begun!

Chef Neil Nicolosi

Chef Nicolosi studied Culinary Arts at The Art Institute of Ft. Lauderdale, Florida.  He studied under Certified Master Chef Klaus Friedenreich.

He began his career cooking for prestigious gourmet food establishments in South Florida.  He served as the Sous Chef at Celebrity Café in Plantation, Florida.  Later, he was a Chef at The Ritz Carlton, West Palm Beach (Manalapan), Florida. 

Starting in 1999, Chef Nicolosi owned and operated two gourmet food companies in West Palm Beach, Florida.  He created pre-packaged frozen gourmet food for the yachting industry in addition to running a successful catering company and owned a personal chef in-home dinner party company.

In addition to he being a Chef, he also worked for the second largest food distributor in the United States and was an Operations Manager in West Palm Beach and Ft. Lauderdale Florida for a leading private aviation catering company.

Chef Nicolosi taught culinary arts for the worlds largest private aviation company.

As a member of the American Culinary Federation, he wrote the ACF South Florida chapter newsletter from 1997 through 1999.  He also participated in a weekly South Florida radio program airing two minute “culinary tips” radio spots.
